There’s this mantra I’ve been saying around the house lately that seems to describe our family dynamic and approach to life just perfectly. Wanna hear it? Here goes: We are not a Hallmark family.
And it’s true, we just do not live up to the high standards placed on society by Hallmark and Papyrus and all the pretty stationary makers who have everything ready for every season.
I say this because we don’t mail out Christmas cards, we don’t hang up adorable pictures all over the house and we’ve long ago stopped writing long sappy love letters. We mostly express love through silly faces, funny cards and complete disorganization.
You see, a Hallmark family and subsequently a Hallmark blog, would have for you a perfectly bunny shaped, pastel coloured dessert just in time for your Easter celebrations.
In typical non Hallmark fashion, what I do have for you is a delicious, white (that’s seasonal right?) roasted cauliflower dish that will surely add a light, healthy flare to your perfectly set Easter table.

- 1 head of cauliflower, cored and cut into small florets
- 1-2 tbsp of avocado oil
- Salt and Pepper
- 2 tbsp softened butter or ghee
- 1 tsp sea salt
- 1 clove of garlic, minced (I like to use a garlic press)
- 1 tsp fresh rosemary, chopped (2 sprigs)
- 1 tsp fresh thyme (leaves from 4-5 sprigs)
- 1 tsp fresh parsley, chopped plus more for garnish
- Preheat oven to 425 F
- Line large baking sheet with parchment paper or aluminum foil.
- Drizzle avocado oil on baking sheet.
- Add chopped cauliflower to sheet and stir with wooden spoon until coated well with oil.
- Season cauliflower with salt and pepper.
- Place in oven and bake for 10 minutes. At the 10 minute mark, stir the cauliflower and return to oven for another 10 minutes. Edges should start to brown.
- While cauliflower is roasting, prepare butter. Stir garlic and herbs into butter or ghee until well combined.
- Heat butter mixture gently in microwave.
- Once cauliflower is ready, drizzle butter mixture over. Stir to combine and serve.
