Alright lads and lassies, have I got a treat for you today. A mango lassi is a traditional Northern Indian drink that is often served as a beverage in Indian restaurants. It’s a simple but delicious combination of yogurt, super sweet ripe mangoes and cardamom. There are many variations and, Madhur Jaffrey, a renowned Indian chef even has a spicy, minty lassi in my favourite cookbook of hers.
Today, I have my own spin on this refreshing drink. Unlike the traditional beverage, it has no added sugar and just relies on the sweetness of the mango. I’ve made it dairy-free because coconut milk makes just as creamy a drink as yogurt. I’ve also added vitamin C powerhouses lime and orange. To really make it worth your while, I’ve fortified this drink with kale leaves. The flavour of the mango and the lime completely hides the kale and so this drink will be acceptable to all the veggie phobic people in your life. Sweet deception is what I like to call it.
I know I’ve already sold you on this but there’s one more special ingredient that really sets this drink apart…yellow curry powder! Combined with the sour of the lime and sweetness of the mango, this curry powder provides a spicy, cooling sensation just like you get from eating a spicy curry. This drink is meant to be a dessert or a breakfast or even an afternoon cool down snack on the beach, by the pool or in front of your air conditioner vent.
