Tomorrow is the first day of fall so….I’m on a tight deadline to bring you this one last sip of summer. The time has come to bid farewell to long sunny days, drinks out on the patio and warm nights lit only by campfire. Don’t get me wrong, I love the fall. It ranks a very close second behind summer. But, this time of year is bittersweet for me. I wake up when it’s still dark not nudged to start my day by the sweet rays coming in through the window. The day starts and ends with a cool, crisp edge to it. I ain’t no fool, I know what that means, it means winter is coming and that’s the part I dread. despise. wish would never come.
In order to possessively hang onto summer just a while longer (at least another day), here’s a recipe for watermelon margaritas. I like a margarita that is tart and really allows the tequila to shine.
Rick Bayless has an excellent recipe for traditional margaritas and I have mirrored this recipe after his. Be sure to choose a high quality tequila, I like to use Tequila Ocho, blanco which is fresh and has an almost herbaceous quality to it. I don’t like a cocktail that is very boozy so this one is nicely balanced. Apparently I’m very opinionated when it comes to margaritas because I also believe a proper margarita should only be served in salt rimmed glasses.
But don’t let my opinions get in your way, go out and buy one last watermelon and cheers to all the beautiful summer moments you’ve had because tomorrow officially marks sweater and scarf season.

[…] This stuff works so well anywhere you use usually chili powder. So far, I have made chili and pulled pork with this amazing blend. You can season your meats with it or use it straight up as a dry rub. Of course anything you make with this would pair amazingly well with these watermelon margaritas. […]
